JACKIE’S SPRING SALAD

One of our most popular salads comes from Dixie’s niece down in Louisiana and is a beautiful and fresh salad for both elegant, and outdoor settings. Her family down there has brought us many great ideas, and we always enjoy joining them for delicious meals. Jackie’s father (Dixie’s brother) is an incredible Meat-Master on the grill, having served in the Army as a Veterinarian (Food Inspection). He introduced your YOUNG Innkeepers to flank steak, once thrown out and he’d have the base butcher save while he was serving in San Antonio. Not much later, flank steak became a Fajita craze, .

JACKIE’S SPRING SALAD

DRESSING:

1 cup oil
1/2 cup red wine vinegar
1 Tbls soy sauce

Mix together then add 1 cup sugar (that’s right – I said 1 cup!) and shake like crazy!!

SALAD:

romaine hearts
broccoli florets
sliced strawberries
4 green onions (green part)

4 Tbls butter
1 cup chopped pecans or walnuts (whichever you like)
1 package Ramen noodles (noodles only – throw seasoning packet away)

Brown pecans and Ramen noodles in butter

Before serving, add dressing (we add strawberries at this point), nut and noodle mixture – toss.
