Baked Chicken Pesto

One of our pore popular “go to” dishes for dinners, large and small, was this easy to make dish – Baked Pesto Chicken. While this recipe reflects “4 servings” you can see how easy it is to up the servings, and we have made for groups in excess of 100!!! It is always well received, and leftovers tastes just as good as the day they were made. Makes a great sandwich piece as well. Pictured above we served on Angel Hair Pasta and with a side of Molasses & Butter Glazed Baby Carrots.

Baken Pesto Chicken

Serves 4 (prep time 10 minutes – bake time 25 minutes)


4 Skinless Chicken Breasts (about 1 1/2 pounds)

4 oz. Pesto Sauce

1 can diced seasoned (i.e. garlic and basil) Diced Tomatoes

1 package of Shredded Italian Cheese

Fresh Basil (chopped) for garnish


In a ziplock bag, mix chicken breasts and pesto sauce. Refrigerate this marinade for minimum of 4 hours.

When ready, preheat oven to 350°F. Line a baking sheet with heavy duty foil.

Place marinaded chicken on baking sheet and bake for about 30 minutes or until internal temperature reaches 170° (no longer pink in center).

Remove from oven, top with cheese, tomatoes, little more cheese and return to oven for 3-5 minutes. Cheese will melt over tomatoes.

Remove from oven, plate a piece of chicken on pad of angel hair pasta or wild rice and serve immediately.
